Pesto Pasta with Veggies and Mozzarella

This pesto pasta is one of my family's favorite recipes. I'll bet that if you give you give a try, you will love it also! (It's so easy and customizable, that it's hard to even call it a "recipe"!)
I adore that it is:
- Super easy and quick
- Made mainly from pantry and freezer staples
- Nutritious, with tons of veggies and protein
- Fun! Those mozzarella balls are a crowd pleaser
- Yummy to eat (pesto for the win!)
- That's pretty much all you need to impress kids!
Ingredients
- "16 ounces pasta (100% bean, 100% lentil, or 100% whole wheat preferred)
- 12- or 16-ounce bag of frozen veggies, your favorite (broccoli is shown here)
- 1 cup pesto, clean-eating store-bought or homemade
- 8-ounces of mozzarella balls
- salt and pepper, to taste"
Directions
- "Bring a large pot of water to a boil and cook your pasta according to package directions. Be careful not to overcook bean and lentil pasta, as it can get mushy.
- Steam the frozen veggies, either on the stove or in the microwave.
- Drain the pasta and add it back to the pot, along with the vegetables. Stir in the pesto sauce and mix gently until everything is combined. Add in the mozzarella balls and toss to mix.
- Enjoy warm. "
