In this recipe, we leave the chia seeds whole, which lends a very unique texture. Some people, like me!, love this texture. Other people, like my husband, don't really enjoy it. Troubleshooting Chia Pudding

If your chia seeds don't "gel" like they are meant to, then it's probably time for a new bag. (Older chia seeds tend to lose their ability to gel up.) The type of milk you use could also impact how well the seeds gel. So, you could also try playing around with the ratios of liquid to chia seeds. Feel free to triple this recipe (or more!) and make lots of pudding at once. If you wait to add the fruit until you eat it, it will keep very well in the fridge for several days!
